Craving a dessert that is homemade with fruit and evokes the flavors of the good, old summertime?   The Goddess on the Go has peach blueberry hasty cobbler that is the sweet solution.  This flavorful fruit cobbler is a quick bake item that is so easy to make yet so delicious.

This dessert is a what the Goddess on the Go calls a hasty cobbler, a grand finale to a meal that is made in a jiffy but leaves even the most reluctant baker feeling accomplished.  Some might call it a dump cake which is such an ugly title for a baked good that is so wonderfully scrumptious.  The goddess prefers the nomenclature, hasty cobbler, a simple country dessert that wows by using very few ingredients and without making you mess or stress to bake. 

Summer fruit cobblers are beautiful in their simplicity.  You do not even have to peel the peaches in this one, good quality jarred peaches that have been thoughtfully peeled and sliced for you in their own fruit juice, will render the most flavorful results.  Coupled with fresh blueberries and a few other simple ingredients cobbled together, then enhanced with vanilla ice cream or whipped cream, the resultant dessert is perfect for the sunshine season.

Peach Blueberry Hasty Cobbler Ingredients

30 ounces Dole Peach Slices in their own juice

1 ¼ cup Fresh Blueberries washed and dried

¼ cup Light Brown Sugar loosely packed

2 teaspoons ground Cinnamon

2 pinches of ground Nutmeg

1 box Duncan Hines Butter Golden Cake Mix

1 stick plus 6 tablespoons Butter

PAM Baking Spray

Vanilla Ice Cream or Whipped Cream

Peach Blueberry Hasty Cobbler Instructions

Preheat oven to 350 degrees.

Spray a 9 x 13 glass pan with baking spray.

Toss peaches with their juices and blueberries together using a plastic spatula.

Gently mix in brown sugar, cinnamon and nutmeg.

Pour evenly into baking pan.

Top evenly with Butter Golden Cake Mix using a spoon.

Slice cold butter into 1/8-inch slices and cover cake batter completely ad evenly with the slices.

Bake for 50 minutes until lightly golden brown and bubbling.

Let set at room temperature until set or refrigerate.

Spoon into bowls and top with ice cream or whipped cream. 

You may rewarm cobbler slightly microwave before serving.
