Strawberry Streusel Muffins

with Chocolate Drizzle

The mere thought of strawberries invokes thoughts of their come-hither sweetly perfumed aroma that calls us to indulge in their delectable taste.  Summer is when strawberries are at their peak - red, ripe and aromatic, they are delicious alone, sliced into a cereal, dipped in chocolate or incorporated into a muffins and cakes.   Red, ripe and juicy, strawberries are the true goddess of the berry kingdom.

This recipe makes strawberries the jewels in the crown of a muffin that is moist, flaky and boasts of a streusel topping with chocolate drizzle.  This strawberry streusel muffin has a delightful appeal in both appearance and taste.  It is the perfect pretty addition to a breakfast or teatime table.

Streusel Topping Ingredients

6 tablespoons Cold Butter cubed

1 ½ cups All Purpose Flour

1/3 cup Light Brown Sugar

1/3 cup Granulated Sugar

2 dashes Ground Nutmeg

 

Strawberry Muffin Ingredients

1/1/2 cups of Sliced Strawberries

2 ½ cups All Purpose Flour

1 tablespoon Baking Powder

¾ teaspoon Salt

¾ cups Whole Milk

6 tablespoons Butter room temperature

1 ½ cups Granulated Sugar

1 ½ teaspoons Pure Vanilla Extract

2 Large Eggs

 

Chocolate Drizzle

1/2 cup Semisweet Chocolate Chips

2 tablespoons Butter

2 teaspoons Corn Syrup

 

Streusel Topping Instructions

Combine butter, flour, brown sugar, granulated sugar and nutmeg by cutting ingredients together with a pastry blender or fork until crumbs form.  Refrigerate for 15 minutes while making muffins.

 

Strawberry Muffin Instructions

Wash, dry, hull and slice strawberries into ½ - ¾ inch pieces.  Set aside.

Line 12 cavities of muffin tin with cupcake paper liners.

Combine dry ingredients and set aside.

Measure out milk and set aside.

Combine butter with sugar.

Beat in vanilla and eggs.

Gradually fold in flour mixture and milk by alternating ingredients.

Fill tins about ¾ full.

Top with strawberry slices and streusel topping.

Bake for 2- 24 minutes till toothpick inserted has only a few crumbs on it.

Cool completely.

 

Chocolate Drizzle Instructions

Melt chocolate chips, butter and corn syrup together in a double boiler stirring frequently until chocolate is melted.

Using a fork, drizzle chocolate on muffins in a back and forth motion.

Let chocolate cool and harden before serving.
