Sheet Pan Pork Loin

With Roasted Potatoes & Green Beans

Sheet Pan meals are au courant these days, and with good reason, an entire meal made on a just single pan is like cooking magic.  A busy person’s dreams are made of sheet pan meals - only one baking sheet to clean, no extra sullied pots, greasy pans or crusty casserole dishes to scrub. In other words - kitchen efficient. Sheet pan meals also add a wow factor to any meal, portraying a beautiful bounty as all the elements of the meal are presented together.  

Succulent pork loin seasoned with rosemary and olive oil, roasted potatoes and fresh string beans is gourmet in taste and appearance.   This recipe comes with an optional, but easy flavorful mushroom gravy - perfect for added flavor if you are a gravy-kind-of gal.  This sheet pan meal is perfect for the empowered Goddess on the Go that you are!

PORK LOIN SHEET PAN STYLE INGREDIENTS

1 - two-pound Pork Loin (NOT a pork tenderloin, which is more dry)            

Olive Oil

Salt and Pepper

8 cloves Garlic chopped very fine divided

3 sprigs Fresh Rosemary washed, leaves pulled away from stem and chopped

1 extra sprig Fresh Rosemary washed for garnish  

2 pounds small Gold and Blue Potatoes cleaned and slice in 1/3 of an inch pieces

1 pound Fresh Green Beans washed  

EASY PORK GRAVY INGREDIENTS

(optional)

2 tablespoons Butter

¼ of a Sweet Onion minced

8 ounces of Button Mushrooms sliced

1 teaspoon Better Than Bouillon Beef

2 tablespoons White Wine if you happen to have a bottle opened

1 envelope McCormick Pork Gravy

¾ cup Water more if needed  

PORK LOIN SHEET PAN STYLE INSTRUCTIONS

Preheat oven to 375 degrees. 

Grease a large baking sheet with olive oil.

Place fat side up on baking sheet.

Rub pork loin with 2 tablespoons olive oil, salt and pepper to taste, 1 tablespoon chopped garlic and half of the chopped rosemary.

Place sliced potatoes on one side of roast and toss with 3 tablespoons of olive oil, salt and pepper to taste, 1/3 of the garlic and the remaining half of chopped rosemary.

Place string beans on the opposite side of roast and toss with 2 tablespoons olive oil, 1 tablespoon chopped garlic and salt and pepper to taste.

Bake for approximately 40 minutes, until internal temperature of pork reaches 145 degrees for some pink or 165 for medium, mostly white.  Baking beyond this temperature will make pork too dry.

Remove sheet pan from oven and let rest 10 minutes. 

Slice pork and return to baking sheet for presentation. Garnish with a sprig of rosemary.  

EASY PORK GRAVY INSTRUCTIONS

(optional)

While the sheet pan meal is cooking, melt butter in a sauté pan. 

Add minced onions and sauté on medium-low heat for 5 minutes.

Toss in mushrooms and combine with onions, sautéing about 7 minutes stirring, until some of the juices have evaporated.

Stir in 1 teaspoon Better Than Bouillon Beef. 

Add 2 tablespoons of white wine (if desired) and stir.

Raise heat to medium, sprinkle pork gravy mix over mushrooms and onion and stir.

Add  ¾ cup water.  Stir until mixture has thickened.  If mixture is too thick, add up to ¼ cup more water.

Ladle some over sliced pork and serve the extra with the meal.
