Chocolate Fudge Rum Donuts with Cherry Rum Glaze and Chocolate Fudge Icing

The Chocolate Goddess has issued a proclamation:

You are hereby permitted to eat as many of these chocolate fudge rum donuts as you want because they are baked not fried, but more importantly because they are divinely delicious.  The Goddess has further decreed that they are made for adults only -

Yes, some desserts are just NOT for kids. 

These chocolate donuts are caressed by a buttery rum glaze that is kissed with cherry preserves to lock in the moist fudge cake. Their fudgey goodness is enhanced further by a thick layer of shiny chocolate fudge glaze.

Baked Chocolate Fudge Rum Donuts Ingredients

2 cups All Purpose Flour

1 teaspoon Salt

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1 cup Granulated Sugar

1 cup Light Brown Sugar

1/2 cup Unsweetened Cocoa Powder, sifted

1 box Chocolate Fudge Pudding

2 ounces of Semisweet Chocolate, melted and cooled

4 Large Eggs at room temperature

1 cup Sour Cream

1/2 cup Corn Oil

1/3 cup Dark Rum

2 teaspoons Pure Vanilla Extract

2 teaspoons Pure Vanilla Extract

PAM Baking Spray

Cherry Rum Glaze Ingredients

1 stick Butter

1/2 cup Water

1/2 cup Granulated Sugar

3 tablespoons Dark Rum

1/2 cup Cherry Jam

Chocolate Fudge Glaze Ingredients

2 1/4 cup Semisweet Chocolate Chips

9 tablespoons Butter

3 tablespoons Light Corn Syrup

1 1/2 teaspoons Pure Vanilla Extract

Chocolate Sprinkles for decorating

To Serve

Ben and Jerry's Cherry Garcia Ice Cream

Whipped Cream

Maraschino Cherries

Makes 24 donuts

 

Instructions

Chocolate Fudge Donuts

Preheat oven to 350 degrees.

Spray donut molds with PAM Baking Spray.

Gather ingredients.

Combine dry ingredients and set aside.

Melt 2 ounces of chocolate in microwave on a very low power setting stirring every 15 seconds. Set aside.

Beat together eggs, sour cream, oil, rum, vanilla and melted chocolate.

Add dry ingredients and beat on low speed 2 minutes.

Fill donut molds 3/4 full.

Bake 10 - 13 minutes.  Donuts are done when a few dry crumbs adhere to toothpick - they are supposed to be somewhat fudgey. 

Cool 3 minutes and place on wire racks with parchment or waxed paper underneath.  Be careful, molds will still be hot.

While donuts are baking place cherry rum glaze ingredients in a medium saucepan and simmer until butter is just melted, stirring frequently.

Baste warm donuts with glaze until it is all used up.

Let donuts cool for several hours.

Chocolate Fudge Icing

Place chocolate chips, butter and corn syrup in a microwave safe bowl. 

Melt on low power, stirring every 30 seconds until little bits of chocolate remain.  Stir until completely melted.

Add vanilla and mix in.

Spoon icing over donuts.  Let set overnight.

Serve with Ben and Jerry's Cherry Garcia Ice Cream, whipped cream and maraschino cherries.
