Chocolate Pumpkin Fudge

This is an amazing and unexpected delicious flavor pairing, chocolate and pumpkin.  Remember that left over fudge from the Chocolate Fudge Caramel Apples?  The Chocolate Goddess put it to good use and so should you.  I poured it into an 8 X 8 greased pan and then the next day made the pumpkin fudge.  Big thick squares of this delicious fudge are the perfect reward after raking leaves on a cold crisp day!

If you don't have left over fudge from making the Chocolate Fudge Carmel Apples, here is the recipe for the Chocolate Fudge, as well as, the Pumpkin Fudge.

Chocolate Fudge Ingredients

2 tablespoons Butter

2/3 cup Evaporated Milk

1 and 2/3 cup Granulated Sugar

1/2 teaspoon Salt

2 cups Semisweet Chocolate Morsels

2 cups Miniature Marshmallows

1 teaspoon Pure Vanilla Extract

Pumpkin Fudge Ingredients

1/2 cup Pumpkin Puree

2 tablespoons Butter

2/3 cup Evaporated Milk

1 and 1/4 cups Granulated Sugar

3/4 cups Light Brown Sugar

1/2 teaspoon Salt

1 teaspoon Cinnamon

1/2 teaspoon Ginger

1/2 teaspoon Nutmeg

2 cups Miniature Marshmallows

2 cups White Chocolate Morsels

1 teaspoon Pure Vanilla Extract

Instructions

First, make the chocolate fudge (if you aren't using left over fudge). 

Butter an 8 x 8 baking dish.  Measure out all ingredients.

In a medium saucepan, combine butter, evaporated milk, sugar and salt. Bring to a low, rolling boil and stir constantly for 4 minutes and 30 seconds. Remove from heat.

Quickly mix in miniature marshmallows and semisweet morsels and stir until completely dissolved.  Stir in vanilla.  Pour into baking dish and let cool.

Second, make the pumpkin fudge.

Measure out all ingredients. 

In a medium saucepan combine pumpkin puree, butter, evaporated milk, sugar, light brown sugar, salt, cinnamon, ginger and nutmeg. Bring to a low, rolling boil and stir constantly for 4 minutes and 30 seconds.  Remove from heat.

Quickly mix in miniature marshmallows and white morsels and stir until completely dissolved.  Stir in vanilla.  Pour on top of chocolate fudge layer.  Let cool completely.

Cut into squares.
