Cheesy Biscuit Tacos
The Goddess on the Go is morphing into the Game Day Goddess. Super Bowl Sunday is on the horizon and the pressure is on to mass produce food. This is a day when calories don't get counted and the table needs to be covered with a selection of delicious hearty foods, kicking off with the appetizers.
More food is more fun on this special day. All of your Super Bowl foods need to be delicious, but some of them need to be quick and easy to prepare. I mean, who wants to miss any of those great commercials?
These cheesy biscuit tacos are so easy. Prepare you taco meat ahead and plate your lettuce and tomatoes. Just before company arrives, bake those biscuits, cut out the center and say cheese! Fill with taco filling and garnish with some more cheese. Let the eating begin!
Ingredients
2 packages Pillsbury Grands Biscuits
2 - 8 ounce bags Fine Shredded Cheddar
2 pounds 85% lean Chopped Meat
1 envelope Taco Seasoning Mix
1 envelope Sloppy Joe Seasoning Mix
1 can Tomato Paste
2 cups of Water
3 heads Curly Leaf Lettuce
6 Tomatoes Chopped
Parsley for garnish
Cooking Instructions
Plate lettuce and tomatoes ahead.
Saute and brown chopped meat, stirring frequently, until just a bit of pink remains. Drain off most, but not all, of the fat.
Sprinkle meat with the taco and sloppy Joe mix.
Add tomato paste and water and simmer on low for 5 minutes, stirring occasionally. Set aside. This can be done a few hours before. Just add a bit of water if needed.
Bake biscuits on parchment lined baking sheet. Do not grease the parchment.
Remove from oven. Let cool a few minutes and cut out the center saving the top for garnish.
Push down biscuit interior and sprinkle with cheddar. Melt a few seconds in microwave, if desired.
Warm taco meat and spoon into biscuit cavity.
Garnish with more cheese and parsley.
Crown with biscuit top and place in center of a bed of lettuce and chopped tomato.
