Sophia's Grown Up S'mores

Everyone loves S’mores, right? With the unofficial start of summer this weekend, it is time to up the ante in your S’mores game. Save the marshmallows for the kids. Let the grown ups indulge in this S’mores, where creamy coconut replaces that overly sweet marshmallow flavor.

The recent stay at home orders have everyone baking, if they can find flour that is. If there is no flour at the store, a young chocolate goddess must get creative. A craving for coconut and chocolate, prompted my great niece Sophia, a talented young chef, to rummage through the baking cabinet to see what she could create that would take care of the craving.

These S’mores hit the spot - dark chocolate, creamy coconut piles on a graham cracker gives this easy dessert a satisfying crunch. Better yet, there is no need to jockey for a good spot around the fire to toast marshmallows.

GROWN UP S’MORES INGREDIENTS

8 Graham Crackers

2 cups Coconut Flakes

1/2 cup Heavy Cream

1 1/2 tablespoons Powdered Sugar

1 1/3 cup Dark Chocolate Chips

GROWN UP S’MORES INSTRUCTIONS

Cover sheet pan with foil or parchment papers

Break graham crackers into quarters and spread across sheet pan

Add coconut flakes, heavy cream, & powdered sugar to a bowl and combine

Using a spoon, add coconut mixture to the top of each quarter graham cracker and place entire sheet pan into the freezer

Melt dark chocolate in a double boiler and let cool slightly

Remove sheet pan of graham crackers and coconut mixture from freezer

Pipe or spoon dark chocolate over the top of the coconut

Place sheet pan in freezer until chocolate hardens, then refrigerate

Serve Grown Up S’mores later that day. (If refrigerated overnight, the graham crackers will become soggy.)
