Lemon Custard with Blueberry Compote
The Goddess on the Go refreshes you palette this spring and summer with this easy to make Lemon Custard and Blueberry Compote.
Makes 6 servings.
First I made super easy fresh blueberry compote. Here are the ingredients:
2 pints fresh blueberries (rinse your berries)
½ cup of granulated sugar
1 ½ tablespoons of butter
1 teaspoon fresh lemon juice
3 tablespoons of water
2 teaspoons of cornstarch (mix this with the water)
Put this all in sauce pan and cook and stir ingredients over a low heat. Cook until berries burst and compote begins to thicken. Remove from heat and let cool at room temperature.
Then I used Jell-O cook and serve lemon pudding as my foundation but instead of water I added whole milk and the rind of one fresh lemon. How easy is that?!
Make sure to stir constantly as it comes to a boil over medium heat. Don’t overdo the boiling or it will be rubbery. Remove from heat.
Place custard in 6 serving dishes and top with blueberries. I placed mine in glass serving dishes with lids so I could send some home with my grandson. BE Goddess and make this easy dessert - it’s like sunshine in a cup!
